    About this recipe: A crunchy confection with a great date taste.

    Ingredients
    Serves: 24 

    • 2 eggs, beaten
    • 200g caster sugar
    • 180g chopped dates
    • 1 teaspoon vanilla extract
    • 15g (1 tbsp) butter
    • 85g crispy rice cereal
    • 75g desiccated coconut

    Method
    Prep:10min  ›  Cook:5min  ›  Ready in:15min 

    1. In a medium saucepan over medium heat, combine the eggs sugar and dates. Bring to the boil, stirring occasionally, and boil for 5 minutes. Remove from heat and stir in the butter and vanilla. Mix in crispy rice cereal. Butter hands and roll the mixture into walnut sized balls. Roll the balls in coconut. Serve.

    These are really yummy - keep them in the fridge and you have a lovely chewy, crispy ball to bite into. We love dates so they went down a treat - more like sweets than anything else. Think I might make them as a tray bake next time though as rolling the mixture into balls was quite messy.  -  17 May 2016

    I've been making these for years and they are always a huge hit. DO NOT boil longer than 3 minutes or it will turn into a crumbly mess that won't roll together.  -  09 Feb 2006  (Review from Allrecipes US | Canada)

    These are a really nice holiday treat although you can enjoy it any time you choose. I've made this recipe for years, but the difference is that I use 1 cup sugar, 1 cup chopped dates, 1 egg, 1 stick of margarine, 1 tsp vanilla, 2 1/2 cups rice krispies, and 1/2 cup chopped pecans. As I form the balls I roll it in coconut. If the mixture is too hot, the balls will not form correctly and if it is too cool the coconut won't stick like it should.
