2 eggs, beaten
200g caster sugar
180g chopped dates
1 teaspoon vanilla extract
15g (1 tbsp) butter
85g crispy rice cereal
75g desiccated coconut

In a medium saucepan over medium heat, combine the eggs sugar and dates. Bring to the boil, stirring occasionally, and boil for 5 minutes. Remove from heat and stir in the butter and vanilla. Mix in crispy rice cereal. Butter hands and roll the mixture into walnut sized balls. Roll the balls in coconut. Serve.
These are really yummy - keep them in the fridge and you have a lovely chewy, crispy ball to bite into. We love dates so they went down a treat - more like sweets than anything else. Think I might make them as a tray bake next time though as rolling the mixture into balls was quite messy. - 17 May 2016
