About this recipe: This homemade eggnog, spiked with rum and whisky, will fill you with glee. Perfect at Christmas.

Ingredients
Serves: 8 

  • 500ml single cream
  • 500ml full fat milk
  • 200g caster sugar
  • 11 egg yolks, beaten
  • 1 teaspoon vanilla extract
  • 500ml double cream
  • 160ml dark rum
  • 125ml whisky
  • 1 (500ml) tub vanilla ice cream

Method

  1. In a saucepan over low heat, stir together the single cream, milk and sugar. Whisk in egg yolks and cook until a light custard forms; do not boil. Remove from heat and cool, then place in refrigerator and chill overnight.
  2. Into the chilled mixture, stir in vanilla, cream, dark rum, whisky and vanilla ice cream. Serve cold.
