Preheat the oven to 180 C / Gas mark 4. Place the matzo crumbs in a medium bowl and add enough water to cover. Let stand for 2 minutes, then drain off excess water. Do not squeeze.
Add eggs, 50g caster sugar, salt, lemon juice and apple sauce. Stir to combine. Mix in the apples and dried cranberries. Spread the mixture evenly into a lightly buttered 2 litre baking dish. Mix together 50g caster sugar and 1 teaspoon cinnamon; sprinkle over the top.
Bake for 45 minutes in preheated oven, or until the top is golden and the apples are soft.
