About this recipe: My toad in the hole - a classic that everyone loves.


Serves: 4 

  • 12 pork sausages
  • 2 small eggs
  • 100g plain flour
  • 100ml milk
  • salt & pepper to season batter
  • oil for frying and baking

Prep:20min  ›  Cook:30min  ›  Ready in:50min 

  1. Pre-heat oven to 220 C / Gas 7.
  2. Fry the sausages in a little oil until browned all over (about 5-7 mins). Drain on kitchen paper and put to one side.
  3. Put flour and a pinch of salt and pepper in large mixing bowl and whisk in the beaten eggs and milk. Continue whisking until batter mix is smooth and consistency of slightly thick single cream (add a little more milk or water if it's too thick).
  4. Put 2/3 tablespoons of oil in large roasting tin and heat in the preheated oven until oil very hot. Add sausages to tin and pour over the batter. Bake in oven for 30 mins - the batter should rise and turn golden brown and crispy (although I like it when it remains a bit soft on the bottom!) Serve straight away.
