About this recipe:These tender chicken thighs are simmered in tomatoes, beans and herbs and the result is a tasty and easy dish. Experiment with the types of herbs used; you could even add fresh chopped herbs if you have some to hand.

1 red onion, sliced
400g tin chopped tomatoes
1 teaspoon dried Italian herbs
400g tin mixed beans, drained
2 teaspoons good-quality balsamic vinegar
salt and pepper to taste

Heat a non-stick pan and fry chicken, skin-side down, until golden. Turn over, fry for 5 minutes, then add onion. Fry for 5 minutes, then add a tomatoes with herbs, beans and balsamic vinegar.
Cover and simmer for 10-15 minutes until piping hot. Serve immediately.
I loved this - it will become a regular with us. Thank you so much for posting it. We didn't have tin of beans so we rinsed off a tin of baked beans. So easy to make and the balsamic vinegar makes it though you wouldn't know it was in there. Fabulous :-) - 05 Jan 2017
