About this recipe:
A quick and easy pumpkin soup which is delicious and yet ideal for beginners. Serve this at Halloween for a wonderful warmer.
1 onion, chopped
500g pumpkin, peeled and chopped
500ml chicken stock
- In a large saucepan, melt butter and saute onion until soft. Add all remaining ingredients except cream. Heat until boiling and then simmer until pumpkin is tender.
- Blend in saucepan with hand-held blender. Stir in cream and serve. If necessary, reheat without boiling.
This was such a quick & easy soup to make. It was very tasty & didn't need anything adding to it. Yum
