    About this recipe: Unbelievable!!! These are so unique and chewy and spicy... always a hit with everyone! Honey and spices meld together to make an incredible traybake. Increase or decrease the amount of spices to suit your taste. Just don't over bake!! They will be chewy with a sort of glossy centre.

    Ingredients
    Serves: 36 

    • 250g butter, softened
    • 600g caster sugar
    • 8 tablespoons honey
    • 8 tablespoons treacle
    • 2 eggs
    • 125ml milk
    • 1 teaspoon vanilla extract
    • 2 teaspoons cocoa powder
    • 1/8 teaspoon ground cloves
    • 1/8 teaspoon ground allspice
    • 1/8 teaspoon ground cinnamon
    • 1/8 teaspoon ground nutmeg
    • 1 teaspoon salt
    • 1 1/2 teaspoons baking powder
    • 625g plain flour
    • 1 recipe cream cheese icing
    • 60g pecan halves (optional)

    Method

    1. Preheat the oven to 180 C / Gas 4. Grease two swiss roll tins.
    2. In a large bowl, cream together the butter and sugar until smooth. Stir in the honey and treacle, then beat in the eggs one at a time until the mixture is light and fluffy. Stir in milk and vanilla. Combine the cocoa, cloves, allspice, cinnamon, nutmeg, salt, baking powder and flour; stir into the honey mixture until fully incorporated. Mixture will be thick. Divide evenly between the prepared tins, and spread flat.
    3. Bake for 20 to 25 minutes in the preheated oven. Do not over bake, or the cakes will not be chewy. Cut into slices while still warm, remove from the tin, and let cool. Ice with cream cheese icing, and garnish each piece with a pecan half.

    These were very tasty. I don't know if I'd make them again, though. The middle is very doughy. I tried putting it back in the oven but it just got doughier!     I've made these a few times, and they are a hit with everybody who has tried them. I do end up doubling the spices, but other than that, this recipe is great! Followed the directions exactly on mixing and baking, they turn out just fine.  -  07 Nov 2006  (Review from Allrecipes US | Canada)

    My kids are big Wiggles fans and wanted to make "Crunchy Munchy Honeycakes," so we gave this recipe a try. Of course, they were more like "chewy gooey honeycakes." I just didn't enjoy the texture, which I felt was undercooked. The flavor was just the right mix of honey and spices, but far too sweet. Perhaps less granulated sugar and more cooking time? I don't know if we'll try this recipe again, especially since it makes so much (tight fit in the mixing bowl!) and is difficult to halve.  -  25 Aug 2004  (Review from Allrecipes US | Canada)
