Grilled chicken tikka

    Cubes of marinated chicken are grilled until slightly charred. Serve with a curry sauce, or as finger food with cocktail sticks and a range of Indian chutneys.

    • 450g chicken, cubed
    • 1 teaspoon finely chopped ginger
    • 1 teaspoon minced garlic
    • 1 teaspoon chilli powder
    • 1/4 tsp turmeric powder
    • salt to taste
    • 150ml plain yoghurt
    • 1 tablespoon lemon juice
    • 2 tablespooons freshly chopped coriander
    • 1 tablespoon vegetable oil

    1. In a medium bowl mix together the chicken pieces with ginger, garlic, chilli, turmeric, salt, yoghurt, lemon juice and coriander; marinate for 2 hours.
    2. When ready to cook, preheat the grill to medium. Line a shallow baking tray with foil and lightly grease with the oil.
    3. Scoop the chicken cubes out of the marinade and arrange on the tray; grill for 15 to 20 munites or until cooked through and slightly charred.

    Delicious recipe and simple to follow. I added finely chopped fresh chilli for more spice and it was lovely. I would suggest roughly 200g of yogurt for this recipe and put on top shelf of grill, depending on your oven you will need to cook for longer than the recipe suggested as mine took an hour, ensure its charred both sides so it's cooked through but not dry, overall really good flavour, many thanks!  -  07 May 2016
