Minty Mushy Peas

    This is an easy recipe for mushy peas. I like a little mint in mine, but omit if you don't care for it.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 bunch spring onions, chopped
    • 1 teaspoon chopped fresh mint
    • 500g frozen garden peas, thawed
    • 30g butter
    • salt and freshly ground black pepper to taste

    1. Heat oil in a frying pan over medium heat. Add onion, mint and peas. Cover, and cook for 3 to 4 minutes. Mash peas with a potato masher. Stir in butter, and season with salt and pepper.
