Minty Mushy Peas

    This is an easy recipe for mushy peas. I like a little mint in mine, but omit if you don't care for it.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 bunch spring onions, chopped
    • 1 teaspoon chopped fresh mint
    • 500g frozen garden peas, thawed
    • 30g butter
    • salt and freshly ground black pepper to taste

    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Heat oil in a frying pan over medium heat. Add onion, mint and peas. Cover, and cook for 3 to 4 minutes. Mash peas with a potato masher. Stir in butter, and season with salt and pepper.

    I really like this but my peas wouldnt mush properly with the potato masher so I had to put them in the blender. I really liked this because I had never had mushy peas before, but my mum said they usually taste different.  -  07 Apr 2006  (Review from Allrecipes US | Canada)

    Very good! A college bound friend of mine helped himself to three servings! I served them as a side dish to the Bangers and Mash recipe on this site.
