Gordon Syme

Serves: 6

  • 8 tbsp plain flour
  • salt and pepper
  • 1 egg
  • 6 large pork chops
  • 12 medium open cup mushrooms, finely chopped
  • 1 medium onion, finely chopped
  • 500ml chicken stock
  • 1 garlic clove, sliced
  • 25g butter

Prep:15min  ›  Cook:30min  ›  Ready in:45min

  1. Mix plain flour and salt and pepper together in a bowl (use plenty pepper).
  2. Whisk the egg in another bowl.
  3. Dip the chops in the egg and then cover well with the flour mixture.
  4. Preheat the oven to 150 C / Gas 2.
  5. Melt the butter in a large pan and add the chops. Lightly brown on both sides, then place on a shallow tray in the oven for 30 mins.
  6. Add the garlic and fry just to flavour the butter (only a few seconds), then remove. Add the onion to the butter in the pan and fry them in the remaining butter then add the mushrooms, fry these for 3 mins then add the remaining flour and stir this in till flour is cooked. You should have a large mass of mushroom and onion in the pan.
  7. Now add the chicken stock to the mass slowly until this makes a nice gravy (you may need some more water) this will cook for about 15 mins till the chops are ready. Keep stirring the gravy till it is nice and thick.
  8. Once the chops are ready, pour the gravy over them and serve with mashed potato.

Really tasty send chops were tender send not tough at all which I normally get! - 22 Sep 2014

Nice and simple yet very flavoursome. Only difference i made was to lessen the stock as to make it a sloppy mess as we don't have gravy, still worked and was a very tasty dish - 24 Jul 2013
