Vegetable salad with ginger-peanut dressing

    This salad is packed full of flavour and crunch from ingredients like red and green cabbage, red pepper and carrots. Topped with pieces of avocado, black sesame seeds and an Asian-style peanut and ginger dressing makes it taste incredible!

    Serves: 4 

    • Salad
    • 1/2 Chinese or Napa cabbage, thinly sliced
    • 1/2 small red cabbage, thinly sliced
    • 1 large carrot, coarsely grated
    • 1 red pepper, sliced into thin strips
    • 1 tablespoon freshly chopped coriander
    • 1 tablespoon freshly chopped Thai basil
    • 30g cashew nuts, roughly chopped
    • Dressing
    • 2 tablespoons creamy peanut butter
    • 2 tablespoons rice vinegar
    • 2 tablespoons mirin
    • 3 tablespoons water
    • 1 clove garlic, crushed
    • 1/4 teaspoon sambal or chilli sauce
    • 1/3 lime, juiced
    • 1 tablespoon finely chopped fresh ginger
    • Toppings
    • 2 avocados, cubed
    • 2 tablespoons black sesame seeds

    1. Mix sliced cabbages, grated carrot, red pepper, coriander, basil and chopped cashew nuts in a large salad bowl.
    2. Blend peanut butter, rice vinegar, mirin, water, crushed garlic, sambal, lime juice and chopped ginger in a food processor until smooth. Add more water if the dressing is too thick.
    3. Divide the salad among 4 plates; drizzle dressing over the salad and top with pieces of avocado and black sesame seeds.
