Banana walnut and maple syrup loaf cake

    A moist, nutty banana loaf cake, made with apple sauce and flavoured with maple syrup. You can use pecans or hazelnuts instead of walnuts, if you prefer.

    Makes: 1 loaf cake

    • 100g apple sauce
    • 75g maple syrup
    • 50g soft brown sugar
    • 1 teaspoon vanilla extract
    • 4 tablespoons semi-skimmed milk
    • 2 large eggs
    • 3 ripe bananas, mashed
    • 150g plain flour
    • 75g wholemeal flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon of salt
    • 75g chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Lightly grease a 1lb loaf tin.
    2. Mix apple sauce, maple syrup, brown sugar, vanilla and milk in a bowl. Mix in eggs, one by one, until well combined. Fold in mashed bananas and mix until smooth.
    3. In a separate bowl, combine flour, bicarbonate of soda, cinnamon, salt and walnuts; stir in banana mixture until just mixed.
    4. Transfer cake mixture into prepared tin; bake in preheated oven for 1 hour, until a skewer inserted into the centre comes out clean, 60 to 65 minutes. Cool in the tin for 10 minutes before turning the loaf cake out onto a wire rack to cool completely.
