Simple sponge cake

    This is a simple sponge cake recipe that can be made in no time at all with only three ingredients. What have you got to lose?

    Serves: 4 

    • 3 eggs
    • 100g caster sugar
    • 100g self-raising flour

    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Preheat the oven to 190 C / Gas 5. Grease a 20 or 23cm round cake tin.
    2. In a medium bowl, whip together the eggs and caster sugar until fluffy. Fold in flour. Pour into the prepared tin.
    3. Bake for 20 minutes in the preheated oven, or until the top of the cake springs back when lightly pressed. Cool in the tin over a wire rack.

    i just made this but poured it into 16 cake cases instead! i made 4 with a pineapple chunk baked to the bottom, 4 with a blob of jam in the middle (like a donut), 4 with vanilla essence and the last 4 with lemon juice.. i made them for a friends little boy who is dairy intolerant but i had to stop myself from eating them all (had one of each to test them lol) brilliant recipe will defo use again.. and again!!  -  06 Aug 2011


    just made this,,so simple,,was unsure about using a recipe without with butter..but turned out well,,rose well & tasted gorgeous,,will defintley use this agian x  -  16 Jan 2011


    this recipe is great i made it earlier and within 20 minutes it was gone i am now in the middle of making another one as it was soo nice. i would reccomend this as it is easy,simple and delicious  -  19 Apr 2011
