This is a very popular breakfast open sandwich that you will see served all over the Netherlands. Some versions have ham but this recipe just has eggs, cheese and pickles.

Ingredients
Serves: 2
2 slices of bread
1 tablespoon butter
2 eggs
salt and pepper, to taste
2 slices of cheese
gherkins, to tatse

Spread cream cheese (or butter) on bread slices.
Melt 1 tablespoon butter in a frying pan over medium heat; add eggs and fry until whites are solid. Season with salt and pepper to taste; flip eggs over and place a slice of cheese on top.
Place the fried eggs on top of the bread; garnish with gherkins.
