Cinnamon plum cake

    This plum cake will fill your kitchen with a wonderful cinnamon scent. It tastes best warm with whipped cream.

    Makes: 1 cake

    • 2 tablespoons caster sugar
    • 1 pinch salt
    • 4 eggs
    • 250g plain flour
    • 1/2 teaspoon baking powder (optional)
    • 400ml milk
    • 500g loose-stoned plums such as Victoria, stones removed
    • 2 teaspoons ground cinnamon
    • icing sugar

    1. Preheat oven to 180 C / Gas 4. Grease a cake tin or a 20x30cm baking tray.
    2. In a large bowl beat sugar and salt with eggs till pale and fluffy.
    3. Gradually add flour whilst beating. If you prefer a fluffier cake, add baking powder (optional). Finally add milk and stir till smooth.
    4. Spread half of the mixture in the cake tin or baking
    5. Arrange plums evenly over the mixture. then spread remaining mixture on top. Sprinkle with cinnamon.
    6. Bake till golden brown. about 40 minutes.
    7. Remove from the oven and sprinkle with icing sugar.
