Strawberry panna cotta

    Thankfully you can use fresh or frozen strawberries for this delectable dessert so you can make it any time of the year. Truly a dessert for special occasions.

    Serves: 12 

    • 500ml double cream
    • 1 (13g) packet leaf gelatine
    • 500g strawberries, fresh or frozen
    • 100g caster sugar
    • 2 tablespoons lemon juice
    • 1 tablespoon vanilla extract

    1. If using fresh strawberries, wash and hull them. Add strawberries to a saucepan with sugar and bring to the boil. Remove from heat and puree till smooth. Let cool.
    2. Soak the gelatine leaves in cold water for 5 minutes. Squeeze out excess water.
    3. Heat cream and remove from the heat. Add gelatine and stir till dissolved.
    4. Add strawberry mixture to cream and stir in lemon juice and vanilla.
    5. Tip into moulds and refrigerate till fully set, about 3 hours.
