Homemade dried tomatoes in olive oil

    I dry my own tomatoes in a dehydrator and marinate them in olive oil with fresh herbs and garlic. Note that they need to be eaten within a few days.

    Makes: 3 200ml jars

    • 3kg ripe small tomatoes
    • 250ml olive oil with a neutral taste
    • 3 large garlic cloves, sliced
    • 2 sprigs fresh rosemary
    • a few fresh basil leaves
    • other herbs of your choice (optional)

    1. Wash the tomatoes and cut them in half. Arrange in a dehydrator and follow the instructions for drying tomatoes.
    2. Layer tomatoes, slices of garlic, rosemary and basil leaves.
    3. Heat oil till almost sizzling and pour it over the tomatoes.
    4. Marinate for 2 to 3 days in the fridge and use wtihin a couple of days.
