Brown rice with asparagus and mushrooms

    Ingredients
    Serves: 6 

    • 200g brown rice
    • salt
    • 750ml vegetable stock
    • 200g fresh asparagus, cut into pieces
    • 50g fresh mushrooms, sliced

    Method

    1. Put the rice with the stock and salt in a saucepan and slowly bring to the boil. Reduce heat and simmer, partially covered, until 3/4 of the stock has been absorbed. Then add the asparagus and the mushrooms. Cook for another 5 minutes, turn off the heat and cover the pan. Let it sit for 5 minutes and serve hot.
