Spinach and ricotta swirls

    An easy party canape to prepare with just a few main ingredients - puff pastry, ricotta cheese and spinach. Serve the swirls on a serving platter when they are still warm and watch them disappear!

    Makes: 12 swirls

    • 150g baby spinach leaves, finely chopped
    • 75g ricotta
    • 1 egg white
    • salt and black pepper, to taste
    • 1 (230g) packet puff pastry

    1. Preheat oven to 180 C / Gas 4. Line a baking tray with baking paper.
    2. Mix chopped spinach with ricotta and egg white until well combined; season with salt and freshly ground black pepper.
    3. Roll the pastry into a large rectangle and spread spinach-ricotta filling on top; roll up the pastry from the longer end, keeping the roll as tight as possible. Slice the roll into 1½cm thick swirls; transfer each swirl onto prepared baking tray, leaving some space between each one as they will expand.
    4. Bake for 25 to 35 minutes in preheated oven, or until the pastry is golden brown; serve warm.
