Creamy Chicken

    This is so simple - a great beginner recipe for children or teenagers learning to cook. Enjoy with rice.

    Serves: 2 

    • 1 tablespoon vegetable oil
    • 2 chicken breast fillets, diced
    • 1/2 green pepper, chopped
    • ½ yellow, orange or red pepper, chopped
    • 120ml (4 fl oz) double cream
    • 120ml (4 fl oz) coconut cream
    • 1 lime, zested and juiced

    1. Heat the oil in a large frying pan over medium heat. Brown chicken on all sides, then stir in the peppers, double cream, coconut cream, lime zest and lime juice. Cover and simmer for about 15 minutes, or until juices are reduced and chicken has cooked through.

    Used different ingredients. As I didn't have coconut milk at hand I used extra double cream.  -  03 Nov 2010


    Something else. some cracked black pepper in this dish lifted it just a little but it was lovely  -  27 Aug 2008
