Roasted Red Pepper, Gruyère and Ham Panini

About this recipe: I came up with this sandwich when my husband wanted a ham and cheese toastie, but I decided to experiment with some ingredients from the fridge. He absolutely loved it!

Ingredients
Serves: 1 

  • 2 teaspoons mayonnaise (optional)
  • 2 slices white or granary bread
  • 2 slices Gruyère cheese
  • 2 thin slices ham
  • 1/2 jarred roasted red pepper, drained and sliced
  • knob butter
  • 2 teaspoons grated Parmesan or Pecorino Romano cheese

Method

  1. Spread mayonnaise onto one side of each slice of bread. On one slice of bread, place one slice of cheese, then ham, red peppers and the other slice of cheese. Top with the other slice of bread with the mayonnaise facing the filling. Butter the outsides of the sandwich, and sprinkle a little bit of parmesan or pecorino onto the butter.
  2. Heat a panini press to medium and cook the sandwich until golden brown and cheese is melted. Alternatively, heat a frying pan over medium heat until warm. Fry the sandwich on both sides until golden. Cut the panini in half and serve.

Used different ingredients. Try mixing basil pesto with the mayo. It makes for a delicious combination with the red peppers. - 07 Aug 2008

Something else. I spread a very thin layer of butter on as directed, but only put mayo on one side. Used some yummy wholegrain sourdough. I decided to bake these in the oven at 200 degrees for 8 minutes on one side, then I flipped and did about 3 minutes on the other. They still tasted and looked like they had been grilled. The parm was a very nice touch. - 07 Aug 2008
