Pasta with garlic oil and anchovies

    A quick and budget friendly pasta dish for garlic lovers.

    • 250g spaghetti
    • 4 tablespoons olive oil
    • 2 tablespoons minced garlic
    • 2 tinned anchovy filets
    • salt and pepper

    1. Bring a large pot with salted water to the boil. Cook spaghetti till al dente following packet directions.
    2. While the pasta cooks, heat the oil over low heat in a large frying pan. Add the garlic and over the lowest possible heat let the garlic infuse the oil till the pasta is ready. Make sure that is does not brown, if necesssary, turn off the heat.
    3. Drain the pasta, reserving 1 cup of cooking water.
    4. Put the anchovy in the frying pan and break it up with a wooden spoon or fork. Fry till it is hot then add the drained pasta to the frying pan.
    5. Toss the pasta with the oil and add some of the cooking water to moisten it. Season with salt and pepper to taste and serve immediately.
