Chocolate cake traybake with caramel filling

    A delicious treat in the form of a chocolate cake traybake filled with caramel sauce and topped with melted chocolate.

    Makes: 12 cake squares

    • Cake
    • 250g plain flour
    • 1 heaped teaspoon bicarbonate of soda
    • 60g cocoa
    • 200g soft brown sugar
    • 1 tablespoon butter
    • 5 tablespoons honey
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 400ml milk
    • To serve
    • caramel sauce, for filling
    • 200g dark chocolate, melted

    1. Preheat oven to 180 C / Gas 4; lightly grease a square baking tin.
    2. Sift flour, baking powder and cocoa into a large bowl; stir in soft brown sugar.
    3. Melt butter and honey in a microwave-safe dish for a few seconds, until runny; stir in cinnamon and nutmeg and mix until smooth. Whisk in milk and add mixture gradually to flour until well combined.
    4. Transfer cake mixture into prepared cake tin and bake in preheated oven for 25 to 30 minutes, or until a skewer inserted into the centre of the cake comes out clean.
    5. Cool cake in tin; slice into equal sized squares. Cut each square in half through the centre and spoon some caramel sauce on top of one half; sandwich back together. Repeat with remaining cake squares and arrange on a tray.
    6. Spoon chocolate on top of each square; store in fridge until chocolate sets.
