Cheese, tomato and olive puff pastry tart

    This is a simple savoury tomato tart made with puff pastry, curd cheese, sliced ​​tomatoes and olives. Perfect as a summer lunch or starter to share.

    Serves: 6 

    • 1 sheet frozen puff pastry, thawed
    • 3 tablespoons curd cheese (see note)
    • 2 ripe tomatoes, sliced
    • olives, to taste
    • sea salt, to taste

    1. Preheat oven to 180 C / Gas 4.
    2. Line a baking tray with baking paper; roll out puff pastry on top of paper, trimming to fit if necessary, and prick with a fork.
    3. Spread the curd cheese on top of pastry in a thin, even layer. Top with sliced tomatoes and olives; season with sea salt.
    4. Bake in preheated oven for about 30 to 40 minutes, or until pastry is golden brown and cooked through. Cool slightly before cutting.

    Curd cheese:

    Curd cheese can be found in larger supermarkets. It's similar to cottage cheese but the texture is smooth.
