Chocolate chilli cake

    If you like spices - you'll love this chocolate cake with a hint of cayenne chilli pepper, cinnamon and nutmeg. Serve slightly warm with vanilla ice cream.

    Serves: 10 

    • 60g butter, room temperature
    • 350g caster sugar
    • 120ml vegetable oil
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 4 tablespoons cocoa powder
    • pinch of salt
    • 1/2 teaspoon ground nutmeg
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon cayenne pepper
    • 300g plain flour
    • 1 teaspoon baking powder
    • 250ml milk

    1. Preheat the oven to 180 C / Gas 6. Grease a bundt or a ring-shaped cake tin.
    2. Mix butter, sugar and oil together in a bowl with electric beaters until light and fluffy; add in eggs, one at a time, until well combined.
    3. Mix in vanilla, cocoa, salt, nutmeg, cinnamon and cayenne pepper.
    4. Mix flour and baking powder together; add flour alternately with milk, into wet mixture beating until smooth.
    5. Transfer cake mixture into prepared tin; bake in preheated oven for 40 minutes or until a skewer inserted into the middle of the cake comes out clean. Cool in tin for 10 minutes before turning out onto a wire rack.
