Fresh cashew apples, also called cashew fruit, are a rare find but if you can find them, try their juice, it is very tasty.

- 2 ripe juicy cashew apples (cashew fruits)
- 500ml water
- 4 tablespoons demerara sugar
- 2 ice cubes, crushed

- Wash the cashew apples thoroughly, remove the nuts and cut flesh into cubes.
- In a blender puree the cashew flesh with water till smooth then strain through a fine sieve.
- Pour the strained cashew juice back in the blender, add sugar and ice and blend till combined.
- Pour into glasses and serve.
