Coconut rice with peas

    Rice cooked in coconut milk is traditional fare in Brazil. In this version, I've added onions and peas for a bit of variety.

    Serves: 8 

    • 3 tablespoons vegetable oil
    • 1 onion, finely chopped
    • 375g long grain rice, rinsed and drained
    • 750ml water
    • 200ml coconut milk
    • 400g tinned or frozen and thawed green peas
    • salt, to taste

    1. Heat oil in a large frying pan over medium heat; add onion and cook until golden brown and starting to soften.
    2. Stir in rice; add water, coconut milk and salt. Cook rice for about 25 minutes or until the liquid has been absorbed. Add peas; stir well and transfer into a serving dish.
