Rice cooked in coconut milk is traditional fare in Brazil. In this version, I've added onions and peas for a bit of variety.

Ingredients
Serves: 8
3 tablespoons vegetable oil
1 onion, finely chopped
375g long grain rice, rinsed and drained
750ml water
200ml coconut milk
400g tinned or frozen and thawed green peas
salt, to taste

Heat oil in a large frying pan over medium heat; add onion and cook until golden brown and starting to soften.
Stir in rice; add water, coconut milk and salt. Cook rice for about 25 minutes or until the liquid has been absorbed. Add peas; stir well and transfer into a serving dish.
