Jackfruit ice cream

    Yes you can make ice cream from jackfruit, and it's easy. This recipe does not require an ice cream maker, just a blender.

    Serves: 6 

    • 1 (565g) tin sweet yellow jackfruit in syrup, drained
    • 1 (400g) tin sweetened condensed milk
    • 300ml double cream
    • 150g chopped cashew nuts

    1. Cut the jackfruit into cubes.
    2. Put the jackfruit, condensed milk and cream in the blender and process till smooth.
    3. Pour the mixture in a container with a tight fitting lid and stir in the cashews.
    4. Freeze for 1 hour.
    5. Remove from the freezer and briefly process again in the blender.
    6. Pour the ice cream back into the container with the lid and let it freeze till hardened, about 30 minutes.


    You can find sweet yellow jackfruit in syrup in Asian speciality stores and online.
