Garlic rice with Brussels sprouts

    Rice is cooked in vegetable stock with garlic and Brussels sprouts to create this easy side dish for chops.

    Serves: 6 

    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 200g Jasmine rice
    • 100g Brussels sprouts - washed, trimmed and halved
    • 500ml vegetable stock
    • salt, to taste

    1. Heat oil in a pan over medium heat; add garlic and cook until fragrant, about 1 minute.
    2. Stir in rice to coat in oil; add Brussels sprouts and cook for 1 minute.
    3. Pour in vegetable stock and season to taste with salt; simmer for 20 minutes, or until liquid is absorbed.
