Pé de moça (Brazilian peanut brittle)

    This is my grandmother's recipe for peanut brittle. I decreased the amount of sugar and increased the condensed milk and it was a bit hit at a party.

    Serves: 10 

    • 1 1/2 (400g) tin sweetened condensed milk
    • 3 tablespoons baking cocoa
    • 2 tablespoons butter
    • 2 tablespoons caster sugar
    • 500g roasted unsalted peanuts

    1. Add condensed milk, baking cocoa, butter and caster sugar to a saucepan. Bring to the boil, then reduce heat and simmer till the mixture has the colour of light caramel and the temperature reaches 140 C on a sugar thermometer.
    2. Line a baking dish or a baking tray with greaseproof paper and grease it well.
    3. Add the peanuts to the mixture and stir till evently mixed. Keep stirring over low heat until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
    4. Pour mixture into the prepared baking dish and let it cool, then break or cut into small pieces. Or spoon small heaps onto the baking tray and llet cool.
