Dairy free coconut jam muffins

    These dairy free muffins are made with coconut milk and filled with jam. I mostly use blackberry jam but any other jam is delicious too.

    Ingredients
    Makes: 12 muffins

    • 250ml coconut milk
    • 1 tablespoon vanilla extract
    • 1 egg
    • 75ml vegetable oil
    • 250g plain flour
    • 100g caster sugar
    • 2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 pinch salt and pepper
    • 35g dessicated coconut
    • 4 tablespoons blackberry jam

    Method

    1. Preheat oven to 200 C / Gas 6. Line a muffin tin with paper cases.
    2. In a bowl mix coconut milk, vanilla extract, egg and oil. Stir well.
    3. Gradually add all the dry ingredients: flour, sugar, baking powder, bicarb of soda, salt and coconut. Mix till well combined.
    4. Finally stir in the jam. The muffins should look streaky.
    5. Grease a muffin tin and distribute the mixture evenly among the paper cases, filling them only to about 3/4, or they will overflow during baking.
    6. Bake till muffins are well browned on top, about 20 minutes. Remove from oven, allow to cool and unmould.
