Easy aubergine pizza

    This isn't a traditional pizza as it's made with a pitta bread or flatbread base but by adding pizza sauce, tomatoes and thinly sliced aubergines - it tastes just as good!

    Ingredients
    Serves: 2 

    • 1/2 aubergine, thinly sliced
    • olive oil, for drizzling
    • salt, to season
    • 1 round pitta bread or flatbread
    • 150ml tomato pizza sauce
    • 1 tomato, thinly sliced
    • 120g grated Parmesan cheese

    Method

    1. Preheat oven to 200 C / Gas 6.
    2. Drizzle olive oil over aubergine slices; cook in a dry pan over medium heat, until slightly softened. Season with salt.
    3. Spread pizza sauce over flatbread; top with slices of aubergine, tomato and grated Parmesan.
    4. Bake the pizza in preheated oven for 10 minutes, or until cheese has melted and bread is crispy around the edges.

    Parmesan cheese:

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
