Coffee rice pudding

    If you like rice pudding and enjoy coffee and brandy - you're love this creamy dessert that combines all three of them!

    Serves: 4 

    • 1L water
    • 200g white rice
    • 1L milk
    • 100g caster sugar
    • 2 tablespoons instant coffee dissolved in 125ml of hot water
    • 2 egg yolks, beaten
    • 3 tablespoons brandy or rum

    1. Bring 1L of water to the boil over medium low heat. Add rice and simmer for 10 minutes; drain.
    2. Heat milk in a saucepan until just starting to boil; add drained rice and simmer over low heat for 15 minutes, or until rice is tender.
    3. Remove the pan from the heat; stir in sugar, dissolved coffee, egg yolks and brandy (or rum). Cook and stir over low heat for 5 minutes. Let rice pudding cool before serving.
