Greek salad with queso fresco

    This is basically a traditional Greek salad but with a Mexican influence as it uses queso fresco instead of feta!

    Ingredients
    Serves: 6 

    • Dressing
    • 6 tablespoons olive oil
    • 2 tablespoons apple cider vinegar
    • 1 tablespoon dried oregano
    • salt and pepper to taste
    • Salad
    • 250g ripe plum tomatoes, seeded and cubed
    • 1 cucumber - peeled, diced and drained
    • 2 green peppers, sliced into thin strips
    • 1 red onion, thinly sliced
    • 150g queso fresco cheese, crumbled

      Dressing:

    1. Whisk oil, cider vinegar and dried oregano together in a bowl; season to taste with salt and pepper.
    2. Salad:

    3. Place tomatoes, cucumber, green peppers and red onion in a large bowl; pour dressing over salad and toss well to combine. Crumble cheese on top and serve.
