Chipotle mayonnaise

    Chipotle chilli pepper gives this homemade mayonnaise a spicy flavour. It's delicious dolloped on fish tacos.

    Makes: 200 ml

    • 1 egg
    • 1 chipotle chilli pepper in adobo (see note)
    • ½ teaspoon mustard
    • 2 lemons, juiced
    • ¼ teaspoon white pepper
    • ½ teaspoon salt
    • ¼ teaspoon caster sugar
    • 180ml vegetable oil

    1. Place the egg, chipotle chilli pepper, mustard, lemon juice, pepper, salt and sugar in a blender or food processor; blend until smooth. Continue to slowly add the oil with the blender still running until you reach the consistency you prefer.

    Chipotle chiles in adobo:

    These chillies are sold in tins and available online and in Mexican grocers. They are dried chipotle chilli peppers in a sauce. They add heat and a smoked flavour to your Mexican dishes.


    This recipe contains raw eggs. It is recommended that pregnant women, young children and the elderly do not consume raw eggs.
