Chocolate mousse with strawberries

    This egg free chocolate mousse is ready in less than 15 minutes.

    Serves: 6 

    • 100g dark chocolate, chopped
    • 250ml whipping cream
    • 2 tablespoons caster sugar
    • 1 teaspoon vanilla extract
    • 1 punnet strawberries, chopped (leave some whole to decorate)

    1. Heat half of the cream in a heat proof bowl in a boiling water bath and stir constantly till the cream is hot and steamy.
    2. Remove the bowl from the water bath and add the chocolate. Stir until the chocolate has melted. (If the chocolate has not melted completely, return the bowl to the water bath for a moment).
    3. Place the rest of the whipping cream in a bowl and beat with an electric mixer until soft peaks form. Whilst stirring, add the sugar and vanilla. Keep beating until firm peaks form.
    4. Fold 1/4 of the whipped cream into the melted chocolate till evenly mixed, then fold in the rest of the cream. Fold in 2/3 of the chopped strawberries.
    5. Divide the mousse among dessert bowls and decorate with the whole strawberries.
    6. Serve at once or refrigerate for up to 8 hours.
