Thai beef and broccoli stir fry

    A common Thai supper dish, called Nuea Pad Namman Hoi. It's very quick to make and always delicious.

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 250g stir fry beef
    • 1 small onion, sliced thinly
    • 250g broccoli florets or Chinese broccoli
    • 3 tablespoons oyster sauce
    • 1 tablespoon granulated sugar
    • 1 teaspoon fish sauce
    • 1/4 teaspoon ground white pepper

    1. In a large wok or frying pan heat the oil over high heat. Add the the beef in one layer and fry, turning once, until browned on both sides. Remove from pan and set beef aside.
    2. Heat the pan over the high heat. Add onion and broccoli, stirring often to scrape up the bits stuck to the pan. Cook the onion and broccoli until just tender, about 5 minutes.
    3. Return the beef and accumulated juices to the pan along with the oyster sauce, sugar, fish sauce and white pepper. Stir well to coat and reheat the beef. Taste and add more fish sauce to taste, if liked. Serve with rice.
