Vegan stuffed tomatoes

    The special ingredient in these tomatoes with vegan stuffing are ground hazelnuts.

    • 6 tomatoes
    • 30ml olive oil
    • salt and pepper
    • 3 garlic cloves, minced
    • 10g minced fresh parsley
    • 10g minced fresh basil
    • 30g finely ground hazelnuts

    1. Preheat your oven to 180 C / Gas 4.
    2. Cut tomatoes in half and brush with olive oil. Sprinkle with salt and pepper.
    3. In a bowl mix garlic with parsley and basil and divide among the tomatoes. Sprinkle with hazelnuts.
    4. Bake in the preheated oven till bubbly, about 30 minutes.
