French toast muffins

    Serves: 6 

    • 1/2 dry baguette
    • 2 eggs, lightly beaten
    • 100g caster sugar
    • 1 dash orange flower water
    • 100g raisins
    • milk or unsweetened condensed milk, or a mix of the two

    1. Preheat oven to 180 C / Gas 4. Grease a muffin tin or line with paper cases.
    2. Cut bread into small cubes and mix with eggs, sugar, orange flower water and raisins.
    3. Add enough milk to cover and toss gently. Set to one side till the milk has been absorbed.
    4. Fill muffin cases, gently pressing down on each to make them more compact.
    5. Bake in the preheated oven till puffed up and golden brown, about 20 to 25 minutes.
    6. Let cool in tin for 5 minutes before unmoulding.
