Spinach salad with melon and prosciutto

    If you like melon with prosciutto as a starter, try this salad variation with spinach and pine nuts. It combines several flavours and textures: sweet, salty, crunchy and fresh.

    Ingredients
    Serves: 4 

    • 200g young spinach
    • 2 tablespoons pine nuts
    • 1/2 cantaloupe melon, seeded and cubed
    • 4 slides prosciutto
    • extra virgin olive oil
    • 1 lemon, juiced
    • salt

    Method

    1. Heat a non greased non stick pan and toast pine nuts till lightly browned, about 3 to 4 minutes, stirring them ofen so they won't burn. Remove from the pan and set to one side.
    2. Rinse and dry spinach leaves very well (preferably in a salad spinner). Add to a salad bowl along with the toasted pine nuts. Season with oil, salt and lemon and toss well.
    3. At the last minute before serving, add the cubed melon and the prosciutto. Toss again and serve at once.
