Rocket and goat cheese tagliatelle

    A lovely vegetarian pasta dish of tagliatelle tossed with rocket, goat cheese, tomato, garlic and pine nuts. It's almost no-cook as all you have to do is boil the pasta, then toss with the remaining ingredients!

    Serves: 2 

    • 150g tagliatelle
    • 1 small bag rocket
    • 3 tomatoes, roughly chopped
    • 4 cloves garlic, crushed
    • 1 handful pine nuts
    • 150g goat cheese, crumbled
    • olive oil

    1. Bring a pan of salted water to the boil. Cook the tagliatelle according to packet instructions. Drain well.
    2. Meanwhile, in a large mixing bowl combine the rocket, tomatoes, garlic, pine nuts and goat cheese.
    3. After draining the tagliatelle, immediately transfer to the mixing bowl. Drizzle with olive oil to taste, then toss well. The hot pasta will wilt the rocket and melt the goat cheese.
    4. Divide between two plates and serve!
