Rice noodles with oyster mushrooms

    A vegetarian Thai inspired dish with rice noodles and oyster mushrooms in peanut soy sauce.

    Serves: 4 

    • 200g rice noodles
    • 200g oyster mushrooms
    • 2 tablespoons oil
    • 2 tablespoons peanut butter
    • 3 tablespoons soy sauce
    • salt to taste
    • 1 bunch coriander or parsley, minced
    • 1 bunch mint, minced
    • 50g chopped peanuts

    1. Cook rice noodles following package instructions.
    2. Slice the oyster mushrooms into thin strips.
    3. Heat oil in a wok or a large frying pan. Add mushrooms and fry till the start to soften. Add peanut butter and stir quickly stir as to not let it burn. Add soy sauce and a little water. The sauce should be thick.
    4. Add drained noodles. Salt to taste and toss well.
    5. Sprinkle with minced herbs and nuts and serve.
