A vegetarian Thai inspired dish with rice noodles and oyster mushrooms in peanut soy sauce.

200g rice noodles
200g oyster mushrooms
2 tablespoons oil
2 tablespoons peanut butter
3 tablespoons soy sauce
salt to taste
1 bunch coriander or parsley, minced
1 bunch mint, minced
50g chopped peanuts

Cook rice noodles following package instructions.
Slice the oyster mushrooms into thin strips.
Heat oil in a wok or a large frying pan. Add mushrooms and fry till the start to soften. Add peanut butter and stir quickly stir as to not let it burn. Add soy sauce and a little water. The sauce should be thick.
