Roasted pumpkin seeds with rosemary

    If you buy a pumpkin, don't throw the seeds in the trash, they make a tasty and healthy snack. Best served right from the oven and still warm.

    Makes: 1 small bowl

    • 1 tablespoon olive oil
    • salt and pepper
    • 100g pumpkin seeds
    • 1 large sprig rosemary, needles minced

    1. Preheat oven to 150 C / Gas 2. Grease a baking tray.
    2. Add pumpkin seeds to a bowl and mix with a little olive oil so all the seeds are well coated. Spread on the baking tray and bake for 25 minutes.
    3. Remove from the oven and mix seeds with the rest of the oil and the rosemary. Best enjoyed when they are still warm.
