Ingredients
Makes: 1 cake
180g plain flour
2 tespoons baking powder
3 eggs
finely chopped fresh rosemary
100ml oil
100ml milk
100g pine nuts
150g fresh soft goats cheese, diced
100g dried figs, chopped
100g grated cheese
Method Prep:10min › Cook:50min › Ready in:1hr
Preheat oven to 180 C / Gas 4. Generously grease a loaf tin.
In a bowl beat flour, baking powder, eggs, rosemary, oil and milk till smooth. Stir in pine nuts, goats cheese, figs and grated cheese till well combined.
Tip into prepared tin and bake in the preheated oven til a knife comes out clean, about 50 minutes.
