Fig and goat cheese bread

    Served warm or at room temperature, this savoury loaf is superb for drinks or cocktails before dinner.

    Makes: 1 cake

    • 180g plain flour
    • 2 tespoons baking powder
    • 3 eggs
    • finely chopped fresh rosemary
    • 100ml oil
    • 100ml milk
    • 100g pine nuts
    • 150g fresh soft goats cheese, diced
    • 100g dried figs, chopped
    • 100g grated cheese

    1. Preheat oven to 180 C / Gas 4. Generously grease a loaf tin.
    2. In a bowl beat flour, baking powder, eggs, rosemary, oil and milk till smooth. Stir in pine nuts, goats cheese, figs and grated cheese till well combined.
    3. Tip into prepared tin and bake in the preheated oven til a knife comes out clean, about 50 minutes.
