2 tablespoons caster sugar
2 tablespoons olive oil
2 dessertspoons honey
1 tablespoon cider vinegar
1 teaspoon lemon juice
1 (150g) bag salad greens
1 avocado - peeled, stone removed and sliced
10 strawberries, sliced
50g (2 oz) chopped pecans

In a small bowl, whisk together the sugar, olive oil, honey, vinegar and lemon juice. Set aside.
Place the salad greens in a pretty bowl and top with sliced avocado and strawberries. Drizzle dressing over everything, then sprinkle with pecans. Refrigerate for up to 2 hours before serving or serve immediately.
Quick and easy to prepare, this salad was like nothing I'd tasted before! It seemed more like a dessert than a lunch, and was a bit of a shock to my palate, but it had a pleasant taste nonetheless. Would be very refreshing on a hot day, lets keep our fingers crossed for better weather! - 03 Jul 2012
