About this recipe: I have served this countless times and I am always asked for the recipe. I also use this dressing on many other salads.


Serves: 2 

  • Dressing
  • 2 tablespoons caster sugar
  • 2 tablespoons olive oil
  • 2 dessertspoons honey
  • 1 tablespoon cider vinegar
  • 1 teaspoon lemon juice
  • Salad
  • 1 (150g) bag salad greens
  • 1 avocado - peeled, stone removed and sliced
  • 10 strawberries, sliced
  • 50g (2 oz) chopped pecans

  1. In a small bowl, whisk together the sugar, olive oil, honey, vinegar and lemon juice. Set aside.
  2. Place the salad greens in a pretty bowl and top with sliced avocado and strawberries. Drizzle dressing over everything, then sprinkle with pecans. Refrigerate for up to 2 hours before serving or serve immediately.

Quick and easy to prepare, this salad was like nothing I'd tasted before! It seemed more like a dessert than a lunch, and was a bit of a shock to my palate, but it had a pleasant taste nonetheless.
