I like to use French du Puy lentils for thie recipe but other green lentils will do too.

1 large onion, minced
1 garlic clove, minced
2 medium courgettes, diced
1 bay leaf
herbes de Provence
salt and pepper
1 (400g) tin tomatoes
170g du Puy lentils or other green lentils
1 vegetable stock cube

Heat a little oil in a heavy pot and fry onion till translucent, about 5 minutes. Add courgettes, bay leaf, herbes de Provence, and salt and pepper. Simmer till the courgettes are soft, about 25 minutes, stirring every so often.
Add tomatoesa nd lentils and cook for 2 minutes, then add water and stir well. Simmer till the lentils are soft, about 25 further minutes. Add more seasoning to taste.
