Italian Christmas struffoli

    Struffoli are a traditional doughnut-type sweet treat in Italy. In this version, a lighter pieces of dough are deep fried and then coated in sprinkles for a festive look!

    Serves: 8 

    • 2 tablespoons coconut oil
    • 1 tablespoon honey
    • 1 tablespoon ground cinnamon
    • 200g apple puree or unsweetened apple sauce
    • 300g plain flour
    • pinch of salt
    • 2 egg whites, beaten

    1. Preheat oven to 180 C / Gas 4; line a baking tray with baking paper.
    2. Melt coconut oil over low heat; stir in honey, cinnamon and apple puree.
    3. Combine flour and pinch of salt in a bowl; make a well in centre and add apple mixture. Fold in beaten egg whites until combined.
    4. Form mixture into small balls and place them on prepared baking tray.
    5. Bake in preheated oven for 10 minutes. Cool struffoli balls on a wire rack for 5 minutes; stack up in the shape of a pyramid and decorate with coloured sprinkles. Serve!
