    This creamy mackerel salad with red onion, gherkins and parsley is a delicious fish starter on rye bread.

    • 1 red onion, finely chopped
    • 6 gherkins, finely chopped
    • 2 tablespoons mayonnaise
    • 1 smoked mackerel fillet
    • 1 tablespoon freshly chopped parsley

    1. Combine red onion, gherkins and mayonnaise together in a bowl.
    2. Flake the mackerel with a fork, removing any small bones if there are any; stir into mayo mixture.
    3. Chill salad in fridge for 30 minutes; garnish with fresh parsley.
