Heat 1 tablespoon oil in a frying pan over medium heat. Stir in the onion and cook until golden brown. Set aside.
Heat 1/2 tablespoon oil in the pan. Season pork chops with salt, pepper and garlic granules, and place in the pan. Cook to desired doneness. Set aside and keep warm.
Heat remaining oil in the pan. Return onions to pan, and stir in tomatoes, garlic and basil. Cook and stir about 3 minutes, until tomatoes are tender. Mix in balsamic vinegar, and season with salt and pepper. Top chops with the onion and tomato mixture, and sprinkle with feta cheese to serve.
Due to not having some of the ingredients necessary, I sort of adapted this a little.
I used paprika instead of garlic powder on the chop, oregano instead of basil in the sauce, and I forgot the feta!
However, it was amazing! It was very Spanishy and totally delicious.
Can't wait to try it with the proper ingredients next time. I might try it on chicken too. - 13 Apr 2013
