Warm potato salad with bacon and mustard dressing

    A quick and simple baby potato salad that's flavoured with bacon, spring onions, fresh basil and a wholegrain mustard vinaigrette. Best served warm.

    Serves: 4 

    • Salad
    • 500g baby potatoes
    • 2 slices bacon
    • 2 spring onions, finely chopped
    • fresh basil leaves, torn
    • Vinaigrette
    • 2 tablespoons white wine vinegar
    • 2 teaspoons wholegrain mustard
    • salt and pepper, to taste

    1. Cook the baby potatoes in plenty of boiling water for 10 minutes, or until tender; drain and slice in half.
    2. Cook bacon in a pan or under the grill until crispy; drain on kitchen roll, then slice into pieces.
    3. Whisk vinegar and mustard together in a bowl until well combined. Season to taste with salt and black pepper.
    4. Place warm potatoes in a bowl; add bacon, spring onions, basil and mustard vinaigrette. Toss potatoes well to coat in dressing and serve.
